Chilli Cheese Toast -- Indian Grilled Cheese

This was so amazing I had to share the recipe before returning home:

Ingredients:
  • Sliced bread
  • Leftover cheese (ANYTHING you are willing to eat - it can be old, that makes it even better. ex: bree, swiss, cheddar, gruyere, camembert, goat, gorgonzola - literally anything you have)
  • egg
  • red chilli flakes or fresh green chillis (the fresh chillis will be a little more spicy)
1. Toast the bread so it is firm but not yet fully brown
2. Grate the combination of cheeses. Add the egg to the cheese and mix well (depending on how many portions of Chilli Cheese Toast you are making, change the number of eggs. You want an even consistency among the cheese, not like an omelet)
3. Add a teaspoon of red chilli flakes or freshly minced green chilli - mix WELL
4. Top the toasted bread with the cheesy-egg mixture
5. Broil the toast (open faced) until the cheese is bubbling and golden (like french onion soup)
6. Allow time to cool, and dig it! The spicier you like it, the more chilli flakes you add

This is a great recipe to use if you have extra cheese, or just want to spice up the traditional American grilled cheese! Enjoy
